If you read my previous post about Advent Calendars, you know I wanted to attempt making a different edible advent calendar this year. When I was researching for edible ones I was pretty surprised to discover that nobody (at least after hours of search I could not find one!) made an Advent Calendar using the treat trend of the moment : cake pops.

I definitely undervaluated the effort to do it and although it took me only one evening (hubby gave me a massive help by cutting out the cardboard Christams tree) it will be a while after I will make cake pops again..

Oh noo, wait! Damn! I forgot.. I need to make a few for my sister’s birthday dessert table next Saturday! Oh well…

Anyway.. I thought this was an original idea and wish I had more time to make both the cake pops decorations and the numbers  perfect. Unfortunately I only have evenings to work on my projects, so after my children are asleep and kitchen is clean, I start all over again (what’s wrong with me!?!? )

This time to make the cakepops I use a cake pop maker instead of crumbling a cake and then adding buttercream. I preferred it this way as the cake pop texture was lighter. At the same time, I needed to be more careful in making them as there usually is a higher chance for the sticks to slip out (even if you inserted them adding some melted chocolate as glue).

To cover the cake pops I used coloured candy coating which I thought was easier to melt than a normal  bar of baking chocolate. Could not be more wrong! Every time I was melting the candy it went back hard in few minutes so I had to put it again and again in the microwave. Seriously… at the end I checked online and discovered that even good brands of candy coating are actually pretty rubbish therefore in some cases you’d need to add a little vegetable fat, which I did and it helped a bit.

To make the cake pop mix I just used a simple recipe which called for:

100 gr of unsalted butter

100gr of sugar

100gr of self raising flower

2tbsp of vanilla extract

2 eggs

After I dipped my cake pops in chocolate, I covered them with white granulated sugar and red granulated sugar (the latter made by myself) and let them dry on a cake pop stand.

The last stage of the process was making the little numbers. Oh dear.. NOT EASY! They kept breaking and the fondant was getting stuck on the letter cutter…that’s why they look a bit scruffy!

While I was preparing all edible parts of the calendar, my hubby drew a Christmas tree on a hard green cardboard and cut it to shape. He then drew the circles and made the holes to insert the cake pops.

Because the letters needed to dry out, I glued them to the cake pops the next day using royal icing. Because they were so thin I broke a few so had to make them all over again..

If I had more time, I would have put more attention to detail in doing it but recently I’m getting addicted to Pinterest where I find  many creative  Christmas projects and I’d like to make them all!

The final result was not perfect but I’m pretty pleased with it and the fact that I think this is the only cake pop Advent calendar on the planet, makes me really proud!

After all this effort if you find another one online please just don’t mention it to me 🙂

When I was pregnant I was most of the time craving savoury food. Olives, peppers, capers, goat cheese were my obsession. Yesterday when I opened my kitchen cupboard, I noticed I still had quite a few cans for my emergency cravings.

Having yet to decide what to make for dinner, I noticed that some of these ingredients were perfect to prepare one of my favourite simple Italian dishes: “Linguine puttanesca”. Usually you would use Spaghetti with this specific sauce but I just prefer linguine ( you could probably prepare it with vermicelli too -thicker spaghetti- it is really up to you).

If you are in a rush and need a quick dish, you will definitely enjoy this. Here the ingredients for 4 people:

  • 400 g  Linguine or spaghetti
  • Salt
  • 3 tablespoons Olive Oil
  • 2 large cloves Garlic
  • 1 Red chilli de seeded and finely sliced
  • 8 canned Anchovies in oil, drained and finely chopped
  • 500 gr of passata (or tin of tomatoes)
  • basil leaf shredded

 

Step-by-step

In a large fryin pan over a medium heat, add chopped garlic and anchovies to the oil and fry for approx 2 minutes, stir occasionally making sure not to burn the garlic

Add in the chilli, capers and olives and continue to cook for a further 3 minutes. Stir occasionally.

Add the passata, stir well and simmer to a gentle heat for 10/15 minutes without the lid.

Once ready, taste the sauce and if needed add some salt (capers, olives and anchovies are quite salty so you probably won’t).

Remove from the heat.

In a large saucepan, cook the pasta in salted boiling water until “al dente”. (To get the “al dente” perfect bite, cook the pasta 1 minute less then the instructions on the packet).

Once the pasta is cooked, drain it. Pour over the puttanesca sauce and stir all together. At the end add some basil leaf shredded.

Serve immediately.

The original recipe calls for chopped parsley but at the last minute I realised that my parsley plant died (!!&!!!?)so I had to use the basil instead and it tasted great too.

Next time on my list,  I will make good use of the last can of roasted peppers in oil and I will prepare Crostini with grilled vegetables and goat cheese, topped with a balsamic vinegar reduction… delicious!

On Fridays Beatrice doesn’t go to nursery so I spend the day with both of my children.  Because it’s getting colder we cannot go to play at the park any more so if we don’t spend the day at home, we usually go to a shopping centre or a soft play area.

Last Friday we went grocery shopping all three together and for the first time I really enjoyed walking down the aisles as I had my children right in front of me playing together and making me laugh.

Because Leonardo is big enough to be sitting on the trolley, I put them one next to the other and they looked as happy as if they were about to ride a roller coaster! And because I had an excuse to be silly, I pretended to be driving a formula one car and in the supermarket’s aisles I was pushing the trolley a little faster, then I was stopping suddenly by pretending to avoid a crash. Watching them laughing was quite amazing!

We spent almost 2 hours in the supermarket and when they started to show  “I have enough now” signs, I managed to make them believe that rather than a bar of chocolate which Beatrice was asking for aisle after aisle, a healthy organic fruit puree was the perfect treat for behaving so well! I made them happy and at the same time I kept them quiet for a little longer while I was finishing my shopping.

In the car on our way home, seeing that Beatrice was particularly chatty (and because I’ve been thinking to say something to her for quite a while), I calmly mentioned the fact that is important for her to understand that if we are in public places, like a shopping centre or at the park, she must always stay next to me and never accept anything by anyone or trust anyone, only mamma e papa’.

She said “YES MAMMA!”

But then when I gave her an example  like “What about if someone gives you chocolate…would you accept it?”

I could see she wasn’t so sure any more .. so I said:

“Beatrice you always need to say no.. you can only take stuff if mommy or daddy are there and they say it’s fine, ok?”.

To trick her I continued…

“What about if a stranger offers you cake?”

With a big smile she said “No mamma!”

GOOD!

“What about sweets?”

“No mamma!”

BRILLIANT

Then I asked her “Do you think it’s ok if someone approaches you and ask you to go away with them? Would you say yes?”

And she replied ” No mamma!”

WOW WONDERFUL She really understood!

So I said with a calm voice ” So if someone wants to take you away what you should do is simply… kick them!”

She looked perplexed so I said again:

“Yes Beatrice… You must kick them and bite them and scream so you can scare them away right?!”

“OK mamma!”

She looked like she understood so I kept giving her examples and it seemed that the message went across effectively without getting her scared.

Because I know that toddlers forget things easily, after talking about other things, I asked her again..

“So Beatrice, what would you do if a stranger offered you chocolate?”

Very proudly she replied:

“Mommy I’ll kick them and bite them and scream!”

Oh dear…

Please don’t offer chocolate to my daughter.. she might hurt you…
