For the last couple of weeks the weather has been pretty awful so we have spent our afternoons mainly playing indoors.

While we were waiting for our friend Max to come over to play, Bee dressed up like a fairy and took care of her Magic Fairy garden. It was a present for her birthday and together with Nonna, she planted the seed for the grass to grow. Although she keeps forgetting to water it (!!) the grass now is pretty high so both Leo and Bee spend their playful afternoons imagining faires coming into the little garden and hiding precious jems in the grass (or driving a car like faires normally do obviously!)

Because they had been waiting for Max to arrive for a while, the kids started to be hungry so I thought why not have a quick snack before Max comes. Usually in the afternoon we have either pancakes or yoghurt and today we tried for the first time the new Petits Filous Magic Squares in Strawberry & Vanilla Flavour and Raspberry & Vanilla flavour.

When Max finally arrived obviously there was no way that Bee and Leo would have just sit there and watch Max eating his own Petit Filous so they got another one each!

Sometimes I think it’s so easy to make kids happy with the simplest things. The magic mix for us is having a lovely friend to play with, giving them a toy which builds their imagination and feeding them with a good, healthy snack. My kids can carry on playing for hours so mamma can finally have a break (and why not some Petit Filous too ;))

I think this video of Bee is pretty funny.  Notice how she mixes up her two languages towards the end when she says “and then we are going comprare ancora (to buy more of) the same” LOL

Living abroad

After having seen Bee crying while saying goodbye to my mom and my sister who recently left to go back to their home in Italy, I can honestly say that one of the downfalls of living abroad is seen my children getting upset every time they see someone leaving after having spent some time with us.

This time was even harder, because it wasn’t only Bee  who got sad but Leo too. He has now reached an age where he can actually realise when someone is not in the house anymore. For instance the day after my mom left he was going room after room calling “Nonna” or  in the car he would suddenly call her name…

It’s heart breaking…literally…

But we made a choice to live here, away from our family and friends and unfortunately we just have to, literally, live with it.

Beatrice and Leo love be surrounded by people, friends, family and they get very attached to everyone who comes to visit us from abroad.

Last month was a big month of celebrations  in our house. We had both my family and my in-laws here to celebrate Leo and Bee’s birthdays. We spent time all together, we laughed, Bee got to take turns and slept in bed first with one Nonna then with the other and both my children got super spoiled with cuddles, kisses, presents. They got away with going to bed too late or eating too many sweet.

They obviously adore having family here and when it’s time to say goodbye it’s just so so hard… for all of us…

When people ask me if I’d like to go back to live in Italy I always reply that although I miss so many things about  “my previous life”,  now my new life is here in Scotland. Both my kids were born here and I would not have stayed here that long (In August it’ll be 14 years of me living here eeek) if it didn’t feel like home.

At the same time, I cannot help but feel nostalgic thinking that I cannot just jump on the plane every time I miss them…sometimes I happen to wonder what it would be like to go back, having Sunday lunch with the family, see friends for dinner while granparents look after the children, spend Christmas with all my cousins and uncles…

I try to see the positive in this though.

Every time we meet it’s special! Sometimes I actually feel we love our family even more now because we cherish so much the limited time we spend together that we make every minute unforgettable. And I honestly think we create amazing memories every time we are together!

One of the best things  it’s the countdown for their arrival day… and when we wake up and it’s almost time to go to the airport, the excitement is sky high!

Every time we go and fetch our family from the airport we take the kids and we prepare big “welcome” posters and we take balloons and hearts and flowers and when the airport doors open our hearts beat faster because we cannot wait to see our loved ones faces in between many faces.  And when they finally come out usually Bee runs towards them and jumps on them! Ohh how I get sooo emotional and my heart fills with joy!!

The day after their arrival is a continuing celebration! In the morning the kids cannot wait to wake up  and go and play with them , show them their toys, their draws.

When someone come to visit us we try to spend our days visiting amazing Scottish places, admire all together beautiful scenaries or have wonderful experiences like the time when we went to feed the lambs which were only few days old!

IMG_2574And obviously every time we are all together there is cake, lots of cake no matter the occasion! And lasagna! And pasta and more pasta! WOW, I get excited only to think about all this!

Although it’s hard to say goodbye to the people we love, I try to remember all the experiences that we share together and when I miss them I smile and feel lucky because no matter what, we are blessed to have people who love us so much.

Pretty Rainbow cake tutorial

If you have read the post about my daughter’s birthday party you must have noticed the big super colourful rainbow cake I made for the occasion.

I had few people asking me how I made that so here it’s a quick visual tutorial plus few tips and tricks I’d like to share with you that helped me during the making.

First of all this cake is pretty easy to make BUT it takes quite a while. You need to have many bowls if you want to recreate all the rainbow colours.

TIP – I suggest you to pay a visit to the poundshop and buy their ones which are pretty, cheap and they do the job. Once you are there buy a couple (or more) of spatulas as these are essential to create this cake.

To find the perfect recipe I watched many tutorials and read many recipes and the best one, the one that worked for me, it’s a Youtube video by Jemma from Jemma Cupcakes. I strongly suggest you to watch it as it’s pretty detailed and it worked perfectly for me. The only thing that I did different is convering my cake with coloured Swiss meringue buttercream and not with white vanilla buttercream and for the batter I used Stork instead of butter (I think this is just out of laziness as I always forget to take the butter out of the fridge and when I do remember,  I don’t have the patience to wait for it to come to room temperature :))

As Jemma suggests, you would need to colour the milk first and that’s when the bowls come handy 🙂

Once the milk is coloured you can start preparing your batter. You would need 9 fresh eggs for this recipe. Being a Happy Egg Taste Maker I obviously used free range Happy Eggs.

You first need to mix up the margarine with sugar, then add the eggs (one at the time), the vanilla essence and the flour.

Then you need to weight the whole batter to make sure that you equally divide it between all colours and that’s crucial if you want to create same height cake layers. Trust me in this,  it’s worth it as when you cut through the cake, it looks much neater and pretty!

 Once all batter is ready you can butter and flour 6 different baking tins (again you can get these from the pound shop, they work fine) and fill them with your wonderful coloured batter. Honestly it already looked so pretty!

While the cakes were baking (I somehow managed to bake all of them in one go – bake them for around 20 minutes or until a skewer comes out clean) you can prepare the buttercream which you will use to fill and crumb coat the cake .

Swiss meringue buttercream

After your cakes have cooled down, you can start stacking the layers and fill them with buttercream. I didn’t trim them like Jemma suggested in her video as I wasn’t too bothered about having darker edges BUT I did level them with a cake leveller.

This recipe has been slightly adapted from Jemma’s recipe. The ingredients you would need are

For the cake –
9 tbsp whole milk
1 ½ tsp vanilla extract
Various colour gels (red, orange, yellow, green, blue & purple)
750g stork
750g caster sugar
9 large free-range eggs
750g sifted self-raising flour
Butter & flour for preparing the cake tins

For the buttercream –
400g soft unsalted butter
800g sifted icing sugar
5 tbs whole milk
½ tsp vanilla extract

For the swiss meringue buttercream which I used to cover the cake,  I followed, once more, Sweetapolita recipe

  • 10 large, fresh egg whites (300 g)
  • 2-1/2 cups (500 g) sugar
  • 3 cups (680 g) unsalted butter, cut into cubes and cool, but not cold
  • 1 tablespoon + 1 teaspoon (20 ml) pure vanilla extract
  • pinch of salt

Once I prepared the swiss meringue butter cream, I divided it equally in 6 bowls and again coloured each batch of buttercrem using a different colour (I told you it was time consuming? :))

Then I started from the bottom of the cake and tried to covered each coloured layer of cake with the same colour of swiss meringue buttercream, then smooth them all together with a flat spatula. There is a video ( I know, another one but I found them so useful!) that shows you how to do it.

TIP: if your cake doesn’t look too smooth you can immerse the spatula in warm water, dry it and then smooth the cake one more time. Most imperfections will disappear

To make the rainbow arch, to go on the top of the cake. I bought different pre-coloured fondant and roll it in long sausages. First I used my hands and then to make it perfect, I used a fondant smoother. And if you need a visual tutorial check this one from Sharon wee creations.

Once the rainbow is ready you should let it dry for I’d say at least for 2 days just to make sure it’s going to be hard once you put it on the cake.

My husband (yes he’s the one who usually creates the fondant figures to put on the top of cakes and cupcakes) had prepared a Rainbow dash mini pony to go on the cake but somehow it fell apart (I think I used a different type of fondant and it just didn’t work :() but if you are interested to give it a go I found a brilliant tutorial. This tutorial is in Italian but it has great pictures where it shows you all the steps to make a pretty My little pony Rainbow dash.

Once the cake was ready,  I followed some photography tips from Marte Marie Forsberg to make the cake look as good as it tasted. I guess having the perfect light was essential to take these pretty pictures and we were lucky because the day of the party the sun was shining and it was brightening the whole room.

I often say that I love spending my evenings at home, watching a movie, checking my social media accounts BUT as soon as I get invited to an event I just jump out of my comfy clothes and I’m quickly ready to party!

And this happened few weeks ago when I was invited to the a gastro night at the Dunstane Boutique Hotel which was celebrating the arrival of a newly appointed Chef Paul Hood, son of Scotland’s first Michelin Star Chef. My husband was too tired to come with me so I called a friend of ours and we went along to the lovely soiree.

We had the chance to taste quality Orcadian food presented in such a sophisticated way.

And had a lovely chat with Chef Paul Hood who is incredibly talented and a very funny guy too

Paul wish was to create traditional Orcadian dishes with a twist. And I think he was spot on because he created a new unique menu which includes decadent dishes like Orkney Crab, Gressingham Duck and Sea Bass and this succulent Roast Loin of Highland Wild Venison
