Last week was my husband’s birthday and although I didn’t want to remind him that he broke his arm’s ligaments during our last Christmas holiday while snowboarding in Italy, I know he loves spending time on the snow so I thought the best cake for him was a mountain shape cake with a little snowboarder figure on the top.

I used vanilla fondant to make the figure and to cover the cake.

 

To go with the snowboard theme cake I baked some vanilla cupcakes and topped them with white and blue fondant snowflakes.

And bought white balloons and blue paper napkins to go with them.

Oh yeah, I bought the meringues too 🙂

Then I followed some tutorials and created white and blue paper poms (Not a big deal I know but they do look great!)

Sprinkled some crystal drops to decorate the table.

And more cupcakes (I attempted to make some blue ones but I have to say for me it’s still very odd eating blue food!)

I took the following pictures with my iPhone at 1am in the morning when I was trying to finish the little snowboarder by following an online tutorial on my laptop.

To be honest we didn’t want to cut the cake as it looked so pretty but when I mentioned that I had filled it with layers of Nutella and fresh whipped cream, we changed our minds!

I decided I am going to create a personalised party every time we have a special occasion in the family so that one day we will remember that day not only for the kisses and cuddles but for the personalised cake too (and the time spent making it!).

Pancake day or “Martedì grasso”

Pancake day (What in Italy would be Martedì grasso – Fat Tuesday) is my last excuse to indulge in some yummy food before lent starts (although a pregnant woman kind of have the right to eat whatever she feels, right? *cheeky*!).

This time I decided to go for a savoury taste and use one ingredient that I literally adore: goat cheese!

I could eat goat cheese every day, on crostini with caramelised red onions and balsamic vinegar, on pizza with sun-dried tomatoes,  in a quiche, the options are endless.

I decided to give it a go and cook a simple, still super tasty goat cheese, mushroom and spinach pancake.

The ingredients you would need to make the filling:

  • 150 gr goat cheese
  • 1 tablespoon oil
  • 1 onion
  • 2 garlic cloves
  • 1 tablespoon butter
  • 250 gr mushrooms
  • 1 tbsp thyme
  • 200gr spinach
  • salt and pepper
  • balsamic vinegar

Ingredients to make the pancakes mixture (fantastic recipe and explanation from Delia Smith)

  • 110g plain flour
  • pinch of salt
  • 2 eggs
  • 200ml milk mixed with 75ml water
  • 50 gr butter

To make the pancake batter, I sifted the flour into a bowl.  I made a little well in the centre and then I cracked in two eggs.

I gradually added the milk mixed with water and whisked continuously until all the flour was incorporated and the batter was runny and smooth.

This time I followed the instruction and melted the butter in a pan, spooned 2 tbsp of it into the batter and whisked it in. I used the rest of the butter to lubricate the pan to actually cook the pancakes.

As Delia suggested in her recipe, I got the pan really hot then I turned the heat down to medium. Now it’s up to you how much batter you add to the pan based on whether you like your pancake very thin or quite thick. I cooked the pancake for about 30 seconds/1 minute and then I attempted to flip it without using any palette knife (it worked 2 our of 3!) and I cooked it for a further 30 seconds, until golden.

I transferred it to a warm plate and in between layers I put a nonstick paper.

I then repeated the procedure for the rest of the batter.

For the filling I heated the oil in a pan then added the onion and let it cook until just starting to caramelize, about 5-9 minutes. I added the garlic and sauteed for about 1 minute, then the butter and let it melt. Subsequently I incorporated the mushrooms and thyme and seasoned with salt and pepper. I cooked all vegetables until they started to caramelize.

At last I added the spinach and let it cooked until wilt.
To make the balsamic vinegar to a syrup like consistency, I just poured it in a small sauce pan and let it boil (please keep checking as all of the sudden the vinegar gets really thick!)

Then I filled the pancakes with the mushroom and spinach mixture, sprinkled some goat cheese, drizzled the balsamic syrup (if you love balsamic vinegar reduction like I do please abuse of it!) and folded it.

“Mommy can I try the cheese?”

And here it’s the result! The taste was fantastic, just a mixed of different perfectly combined flavours!

Thanks to Pinterest I recently got totally passionate about sugar decorated cookies. I spent days pinning and watching tutorials until I finally decided to give it a go.

The worst idea EVER! (as you can see from the picture!!)

They (these professional cooks who probably make their living out of these cookies) make it look so easy and quick…they decorate a biscuit to perfection in seconds…

I swear it’s a real struggle!

What was a first quick attempt, turned out to be a whole afternoon spent standing up in the kitchen with my heavy bump covered in flour and my back which was killing me, just to produce a dozen of bad decorated biscuits and lots of dirty dishes!

Not been stubborn enough, the next day I decided to make a second batch of biscuits. I gave up, I  just could not learn how to decorate cookies in half a day. Plus I realised that the crazy prices these people ask for those cookies are actually worth it.

Disclosure: I didn’t make these cookies for Valentine’s day but for my husband birthday which is the day after Valentine’s day.

18 signs I am not getting any smaller

Time is going so fast that here I am 30 weeks pregnant and I only just realised that I’m getting pretty big! (I said big, not fat!).

Every now and then I notice that even doing a simple movement requires much more effort but, as people keep saying “oh you lucky you look good, you didn’t put much weight” I tend to believe them so I don’t worry too much.

And when I feel bigger, I always blame that stupid mirror that we have at the entrance which indeed makes everyone look twice as large as they really are. Or I blame our scale which shows on and off random numbers therefore I am never sure what my real weigh is.

But the signs are there and now I know I AM getting heavily pregnant because:

  1. when getting out of my car, I often get stuck in between the car door and the car parked next to mine (usually I look around hoping that nobody is watching,  jump back in the car and drive away!)
  2. when I bake a cake half of the flour lands on my bump
  3. when attempting to kiss my husband, my bump reaches him before my lips do
  4. I feel I cannot fit anylonger behind the steering wheel of my car
  5. at the office I keep changing chairs to find a comfortable position
  6. I ask my 3 years old daughter to help me taking  my boots off
  7. my bump has become my table as it’s easier to eat having my plate on it rather than on my desk
  8. getting off the bed is like watching a sea lion reaching for the sea
  9. standing up from the sofa takes more strenght than running  a 5k marathon
  10. when lying down in the bath, I realise that I will never be able to pull myself up again
  11. when my colleague makes me laugh, I think my baby is going to pop out any second
  12. turning from one side to the other in bed involves a full 5 minutes manouvre
  13. my colleague looks at me and rubbing his tummy says “ho ho hoooo”
  14. when I see my reflection in the office glass door, I realise I walk like a penguin
  15. when I drop something on the floor, I just leave it there
  16. when I want to wash my hands I cannot reach the water
  17. often while turning around, I knock my daughter’s head with my bump and I almost make her fall
  18. while cooking I am often in danger of burning my bump
