To celebrate the victory of Italy that played last night against England in the quarter final of Euro 2012 (urgh I’m going to be so unpopular here!! Sorry but I’m being patriotic this time around :)) I propose you a dish whose colours remind me of the Italian flag. This is something very easy to make and I suggest you always keep some puff pastry in your freezer as it comes handy when you want to cook something quickly and healthy!

The ingredients are the following:
1 sheet of frozen puff pastry
250 grams of cherry tomatoes
Basil
Olive oil
1 mozzarella cheese (cut in little cubes)
Salt
Pepper
Preheat the oven 200 degrees. Please note every oven is different so I would suggest that you follow your instinct as you know your oven better than I do 😉
Take the cherry tomatoes and cut them in half. Put them in bowl along with the basil, season with a pinch of salt, pepper and 2/3 tbs of olive oil.

Unfold the sheet of puff pastry on a lightly floured top, roll it a bit with a rolling pin to make it smooth then transfer it onto a baking sheet.
With a knife cut the puff pastry in 4 squares and score all along the sides to make a small border then dock the pastry with a fork.
Spread the cherry tomatoes and make sure they all facing up otherwise their juice will make the pastry quite soggy.
Bake for 15/20 minutes until you see the pastry turn golden.
I personally add the mozzarella at the end as usually if you add it before putting it in the oven, it melts and releases its own juice which again could make the pastry soggy.
If you want to add more flavour, before placing the cherry tomatoes you can spread some pesto on the puff pastry.
Once it is out of the oven just add few leaves of basil and voilà.
